Menu Plan

Sunday: Spinach & Onion Quiche a la my sweet friend/former voice student Amy over at Sing for Your Supper (and if you don't follow her on her amazing blog....you should! Your family will thank you!)

Monday: Martin Family Turkey Dinner (Yes, with dressing, whipped sweet potatoes, Cranberry Almond Pasta Salad and probably Amy's No-Bake Turtle Pumpkin Pie)

Tuesday: CYT class begins BUT I'm only teaching the younger class this time from 4:30-6:30 SO I'll get to come home and have Taco Tico 50cent Tacos for dinner! Wa-hoo!

Wednesday: Turkey Pot Pies (I love those Marie Callendar's in the frozen section--Yum!)

Thursday: Black Bean soup & Cornbread

Friday: Dinner out!/Auditions for Seussical in the big city!

Meal Prep Sunday

Monday: Slow-Cooker Grandmother's Chicken with Mom's Smashed Potatoes
Tuesday: Southwest Chili (recipe below)
Wednesday: using the leftover Monday chicken - Chicken Spaghetti
Thursday: Turkey Sandwiches & Fruit Salad
Friday: Homemade Personal Pizzas
Saturday: Creamy Beef Stew with mushrooms and diced potatoes

Southwest Chili:
1 1/2 lb. Ground Turkey (or beef) seasoned with HG Southwest Seasoning
1 can black beans, drained
1 can southwest corn
1 can rotel
This can be made in crock-pot or stove top and put in tortillas as tacos or quesadillas with LOTS of cheese. I like it over HG Texas Cornbread. So that's how I shall have it! Amen.

I shall also now proclaim that the warm comfort food recipes shall go into hibernation for the winter after this week and as with the SUN, new fresh grilled recipes shall come forth into the Spring with much rejoicing! *Hallelujah Chorus*

Martin Cafe Menu Plan

This week is amazingly free considering it's December so I'm planning out meals. It's comfort food week at the Martin Cafe.

Monday: Chipotle Steak & Corn Quesadillas
Tuesday: Reame's Chicken Noodle Soup (High of 24 here...need I say more?)
Wednesday: Lasagna (frozen. on sale.)
Thursday: Crockpot Garlic Basil Chicken & rice
Friday: Chicken Pot Pie--using crockpot Sunday Roast Chicken
Saturday: Breakfast for Dinner-- waffles & bacon & eggs, oh my.
Sunday: RiverPoint's Coffee House Christmas

Menu Plan Monday

I'm so excited to have my freezer full of yummy meals that I just have to share!
Monday: Chicken Enchilada Soup --with leftover Enchilada Chicken from Saturday--yum!
Tuesday: Roast Stroganoff, which was made with beef stroganoff seasonings & mushrooms but I added a roast because they were BOGO!!! I'll leave it in the crock pot so long that the roast will fall apart. mmmm
Wednesday: Skillet Tex-Mex Dinner --a new Fall product with Spanish rice & I'll add the ground beef that I've already cooked over the weekend. (I love being prepared for the week.)
Thursday: Leftover Buffet---and there WILL be some!
Friday: Orange BBQ Chicken --grillin' out!

Over the weekend, I made this wonderful new Fall Product: Bodacious Butterscotch Pie and oh my glorious COW, it was good! I think maybe we like it even more than Grandma's Buttermilk Pie, although it's a lot like it, just with that sweet hint of butterscotch flavor. Delicious!

Meal Prep Sunday

I just finished making meals all afternoon for my family and another family whose Mommy has been in the hospital. Since I found some great deals on meat at Dillons, I thought I would share my frugal finds and doubled recipes!

Ground beef: $7.45 for 5 pounds (note: made 4 meals for 2 families for about $10)
Split in half-
2.5 pounds made 43 Italian Mozzarella meatballs in 2 separate freezer bags to just warm and eat!
2.5 pounds made with Southwest Seasoning for:
Sunday Tacos for my family
Western Casserole for later:
Can of petite diced tomatoes, undrained
Can of Ranch-style beans with jalapenos
Can of corn, undrained
1 cup rice
1/2 cup cheddar cheese
2 more tablespoons Southwest seasoning
2.5 lb. ground beef
Smoosh all in freezer bag, stick in freezer. I'll let you know how it is.

3 trays of 3 pounds of boneless, skinless chicken breasts for $6 each:
Asian Chicken: instead of Pork Tenderloin---LOVE this recipe for pork, so I know it'll be great for chicken!
Santa Fe Chicken: except I use Tortilla Soup Seasoning, with a can of rotel, regular can of corn & no cream cheese.
Sunday Roast Chicken: except I used cream of chicken soup instead of cream of mushroom and will add egg noodles at the end of cooking in the crock pot.

Praise God for His abundant blessings in my freezer!!!! Praise God for the little mouths that will be nourished, and for health and continued healing in Tracey. Pray for their family and that God will pour out His blessing on them, too!

Working Mom Meal Plan

This week I'll experience once again the life of a Working Mom. I will be teaching the music at CYT Camp from 8am to 3pm every day, which means I leave home at 7:15 and get home at 4:15ish. So of course this turns mealtimes into "fend for yourself" times 'cause Mama is TIRED! But oh the luck....HG to the rescue. :) Meal Plan Monday never looked so good...

Tuesday: Chipotle Chicken and Noodles w/steamed broccoli and cauliflower
Wednesday: OUT to eat with my husband of 13 years to celebrate our anniversary!!!
Friday: Santa Fe Chicken, altering the recipe a little with Tortilla Soup seasoning & can of rotel instead of Maria's Salsa---still can't wait! Adding rice at the end, and warm tortillas....el YUMMO!

This amazing week took sooo little to buy at the grocery store. I even split the frozen bag of chicken between the two chicken meals and the family will never notice since I'm adding rice or noodles to the recipes. My crock-pot will get FULL use this week, but praise God for that invention and whoever invented it. Lord, bless 'em. And....bless this food to the nourishment of our bodies....Amen. That reminds me of this hilarious video.

Meal Plan...Saturday?

We are trying to conserve by having big meals every other night, and mac n cheese or sandwiches type meals the other nights, so here goes the plan, main dinner entree only to keep it simple:
(Notice I never turn on my oven! Too Hot!!!)

Saturday: Stovetop Mexican Casserole

Sunday: Veggie Salads

Monday: Tacos w/leftover mexican casserole

Tuesday: Crock Pot Beef tips & Rice
Recipe: 3lb. stew meat, 3 tbsp. Grandmother's Sunday Roast Seasoning, can beef broth, can mushroom soup, can french onion soup, cook in crock pot on low until cooked, then add 2 cups instant rice until cooked.

Wednesday: Cilantro Citrus Grilled Chicken

Thursday: Salads w/leftover chicken

Friday: Sandwiches/Salads

Wednesday:  Crock-pot Chicken meal of some sort....KEEP READING!!!!! 

Thursday:  MI TIERRA on the Riverwalk in San Antonio!!!  YES!  I LOVE THIS PLACE!  Reeeeeal Authentic Mexican Food.   YAHOO!  (I know.  I've got problems.)

Friday:  Somewhere else in San Antonio with my Awesome SIL & BIL and niece & nephew!

Saturday:  Cousin Leah's Wedding and BBQ Cookout Reception....YEE HAW!!!!

  • Wednesday:  Fruit salad &  Cilantro Citrus Chicken
  • Thursday:   Chicken Fried Steak Sandwiches & steak fries (Daddy's cookin'!)
  • Friday:  Family Night out!

Meal Plan Monday

I haven't done this in a while, although sometimes I do it, but just don't have time to blog it.  This week looks pretty good, so I'll let you in on it....aren't you most honored.

Monday:  Trying out Michelle's fun recipe for Pizza Fondue....Yum!  Crock-pot recipes are my favorite and this is easy!  Spaghetti sauce, chopped pepperoni, mozzarella cheese, throw it all in and dip your breadsticks in!  That's my kinda meal.
Tuesday:  Meatball Subs--Brad's been asking me when I'm making meatballs again.  I always make them with Homemade Gourmet Italian Mozzarella Meatloaf mix.  (I do.  I used to be a customer, remember?)  For the sauce, I'll just use some leftover Fondue!  Again. Easy is good.
Wednesday:  Breakfast for Dinner--Sausage and Egg sandwiches, maybe pancakes if everyone is nice to me that day.  (see how I roll?)
Thursday:  HG Skillet Chicken & Rice and veggies---Another family taste testing that I'm sure will be a big hit.  
Friday:  Going out on a date with my hottie husband to Olive Garden (not my favorite so much anymore, but we have a gift card, so it's FREE, yay!)
Saturday:  Spaghetti and Meatballs (yep the ones from Tuesday, but don't worry I'll freeze them....if everyone is nice to me...mwahahahah)
Sunday:  never really counts in my meal plan because it's God's day and He says we can eat out for lunch, since I'm not capable of rising early enough to start the roast in the crockpot like most pastor's wives.  God just gives me grace like that....cuz He loves me and I'm good with that.   

Oh, yes.  We'll be having dessert this week, too.  HG's Cinnamon Sopapilla Dessert.....had it last night...Wow.  Heaven in your mouth.  Seriously.  I'm just sayin'!

Got this email from my friend, Lori and just thought it was about perfect for the upcoming holiday season of guilt.  I don't know about ya'll but I'm giving myself some grace this year after 3 babies and an exhausting year.  Now shut up and pass the pie!
